Top Luxury Yacht Charter Chef Calls Cooking a "Way of Life"

Whether in the galley of a superyacht or the kitchen of a fine restaurant, Chef Geoffrey Fisher relishes the opportunity to blend creativity, talent and knowledge to transform everyday ingredients into stunning, delicious creations.

While the 35 year old Fisher, born in Manchester, England, is at the top of his profession, he continues to hone his skills.  "I push myself (sometimes) 16 hours a day,” says Fisher. “Being a chef is all about passion. If you don’t have it, don’t go there. It’s long, unsociable hours. It’s not a job; it’s a way of life. Being a chef, you learn something new every day, by working with other chefs, reading books, even watching cooking programs on TV."

His lessons in cuisine and hospitality began early in life, as Fisher washed dishes in his parents’ restaurant in Lancaster, England. He watched the chefs and thought, “I could do that!” His mom and dad recognized his talent and encouraged him to get a formal culinary education.

Fisher attended Lancaster & Morecambe College and took a three-year chef/catering course. He learned everything from general basics and waiting to theory and cooking. He won "best student chef" three years in a row and became runner-up in the national competition, Nestle Toque d’or. In between classes, Fisher worked for his parents in their restaurant.

By age 24, Fisher was head chef at the Swag and Tails, a restaurant in Knightsbridge where he stayed for nearly four years. “It was here I learned how to deal with people, order food, costing and the unpleasant duty of how to fire people,” he said.

Looking for a new adventure, Fisher decided to join a friend in Europe who was chef on the 47-meter M/Y Commitment, which happened to be on charter at the Monaco Grand Prix.  A week onboard and Fisher was hooked and started looking into a career in yachting.

With a little help from the chef onboard sail yacht TWIZZLE,  Fisher landed a job onboard motor yacht WHEELS, and quickly learned charter chefs must be flexible. “I make a point of having a chat with them (charter guests) as soon as possible when they arrive to find out not only what cuisine they like, but also what they don’t like, or if they have any allergies. Talking with the guests is important," says Fisher.

Fisher also learned the pressure of working on a yacht for hire can be intense.  "The pressure in restaurants is tense, but completely different on yachts. On yachts, it’s intense because you never stop cooking. When it’s not the guests, it’s the crew," states Fisher.

After his stint onboard M/Y WHEELS, Fisher joined the crew on motor yacht SLIPSTREAM, where he is still the executive chef.  As to his future plans, Fisher says, "In time I would like to own a small restaurant in Malta. In the kitchen, it’s said you’re only as good as your last service. In yachting, I always say, you’re only as good as your last charter.”

NFL Owner Buys $70 MILLION Luxury Yacht Charter Vessel

The Washington Redskins are currently 3-1 and in 1st place in the NFC East Division, heading into week 5 of the NFL regular season.  What better way for team owner Dan Snyder to celebrate the squad's early season success than to purchase a 224-foot superyacht?

The Washington Post recently reported Snyder's recent purchase, Amels motor yacht LADY ANNE, one of the 100 largest  yachts in the world. Snyder purchased the Mediterranean yacht charter vessel with a group of investors for approximately the same price that he'll spend on two-thirds of his Redskins payroll for the year (or, as one sports journalist described it, "...the yacht cost $30 million less than it took to secure the rights to Albert Haynesworth in free agency!").

Motor yacht LADY ANNE was listed for sale at $86 million when it went on the market earlier this year, but sold for considerably less (sources estimate the price at or near $70 million - about one half of the cost to build the vessel).

The yacht was custom-made by Dutch shipbuilders
Amels for Jerome Fisher in 2006 and named after his wife.  Fisher co-founded the shoe company Nine West and sold his interest to Jones Apparel Group for $885 million in 1999. The couple lived the grand life in Palm Beach until 2008, when, according to the New York Post, they lost $150 million in the Bernie Madoff investment scandal.

The Fishers, who spent last month cruising on the LADY ANNE off the coast of France, did not respond to requests for comment about the sale.

The master suite is designed as a self-contained apartment with his and her bathrooms featuring rare, pure white Thassos marble, as well as a private study and adjacent VIP cabin.

According to Sheeder, there is no need to be an NFL team owner, or a fan of the Redskins to spend time aboard this yacht.  Sheeder teases, "While we might offer a discount to fans of my hometown team, the Miami Dolphins, we will happily charter LADY ANNE to anyone who loves spending private time with their family and friends." 

LADY ANNE is available for hire this winter in the Caribbean at a rate of  $497,000 per week for year-end (Christmas/New Year's Eve) charters, and $476,000 per week for all other weeks.  The yacht returns to the Mediterranean for the summer of 2012 and is available at a rate of €497,000 per week for July, August, and special events (like the Monaco Grand Prix) and €476,000 per week for all other weeks. Food, drinks, fuel and dockage are extra expenses.

Motor yacht Jana Speeds On to Abu Dhabi Grand Prix

Watching an auto race is exhilarating. The elements of speed and danger seem fused together by the power of high-torque engines and the drivers with nerves of steel.  But let's be honest - sitting in the hot grandstands with thousands of strangers is less than the ideal way to view the glamour, the cars, and the grid girls of a Formula 1™ event.

Thus, it's little wonder why the Port Hercule marina in Monaco is filled to capacity in May for the annual running of the Monaco Grand Prix.  With the cars zipping by the marina, there's no doubt the best seat in the house is on a luxury yacht.

Unfortunately, the rest of the 2011 Formula 1 races take place on tracks far removed from the oceanside.  That is, all but one other - the 2011 Etihad Airways Abu Dhabi Grand Prix.

It's rare for a Mediterranean yacht charter vessel to make the sojourn to the Middle East, but one superyacht is anxious to secure a reservation for the 2011 Abu Dhabi Grand Prix - motoryacht JANA.

The classic 46 meter Feadship is actively seeking a booking for the November 11-13 racing event. 
 
Built in 1986, the yacht has received several refits throughout her charter career, the most recent being in 2009, in which she had the majority of her hull and superstructure repainted and most of her of soft furnishings replaced.  The Dutch-built masterpiece accommodates 10 - 12 guests in 5 cabins.  With a large sun deck, motor yacht JANA can easily host race day soirees for 20 to 40 guests.

According to JANA Sheeder, President of SailAway Yacht Charters, "This yacht offers the best in accommodations, cuisine, amenities, and service, plus she has a wide array of aquasport toys for guests to enjoy in the warmth of the Middle Eastern sun."

The yacht is available for the Grand Prix at the rate of €100,000 for 5 days, plus running expenses (items such as food, bar, dockage, etc.).

Sheeder says her office will assist in securing a premium berth to view the race. "We have a first-class team in place to handle all concierge-related requests, from dockage - to ground transportation - to catering a cocktail reception on the yacht."

The race takes place on the Yas Marina Circuit, located on Yas Island, about 30 minutes from Abu Dhabi, the capital of the United Arab Emirates. Approximately 50,000 spectators can view the action on the circuit from permanent, covered grandstands that protect visitors from the desert sun. Of course, the best viewing areas are the most secure and private - the decks of the yachts in the Yas Marina.

The circuit is 5.55 kilometers long, with a total of 21 corners with 9 right turns and 12 left turns. The track features a lot of hairpins and long straights, and there are few potential overtaking places. The pit lane entry is very challenging, as is the exit, which runs underneath the track in a tunnel.

The world’s largest indoor theme park, Ferrari World Abu Dhabi, is also located on Yas Island. The park hosts more than 20 rides and attractions. One of the attractions, Formula Rossa, has the same G force one would feel driving in an F1 car and braking at maximum speed. It is the world’s fastest roller coaster, powered through the 2.07 km track at speeds up to 240 km/h, reaching 0-100 km/h in less than two seconds.

Sheeder believes the popularity of Abu Dhabi is on the rise, and a Grand Prix yacht charter is a great opportunity to explore the area by yacht. "In addition to the race and related social events onboard motoryacht JANA, there is so much to see and do in Abu Dhabi," says Sheeder.  "The people are warm and hospitable and the weather in November feels like the summer in the Med."

New Sunscreen Labels to Protect Consumers

The Food and Drug Administration outlines new rules for labeling of sunscreen and sunblock products - truth in labeling
 
For most of us, the last thing we pack in our duffle bag before a Virgin Islands yacht charter is sunscreen.  At this point, we've all heard the warnings about skin cancer and the need to lather on the protection.
 
What remains less clear is the amount of protection we need.  The confusing jumble of sun protection numbers, symbols, and claims on the sunscreen bottles can be daunting.
 
Soon, simplified labeling standards will help consumers cut through the confusion.   Starting next summer, consumers can look for SPF 15 sunscreens with the words, "broad spectrum" on the label, and feel confident they're being protected from an increased risk of cancer.

Currently, protection standards only to ultraviolet B rays, which cause sunburn. Under the new rules outlined by the Food and Drug Administration,
sunscreens will also have to protect against ultraviolet A rays, often associated with skin cancer.
 
The new guidelines are designed to enhance the effectiveness of sunscreens and make them easier to use.

Sunscreens with less than an SPF of 15 or that aren't "broad spectrum" will have to carry a warning label that reads, "This product has been shown only to help prevent sunburn, not skin cancer or early skin aging.

Jana Sheeder, President of SailAway Yacht Charters, says the clarification is good news.  "Whether on a luxury sailing charter in the Caribbean, or sitting in port watching the action at the Monaco Grand Prix, it seems every client wants the same thing - a sun tan," says Sheeder.  "Until now, most people judged sunscreen by one factor - the SPF number.  Avoiding sunburn is important; thereby reducing cancer risk is critical."  (NOTE: Did you know that you can get melanoma - skin cancer - in your eyes?  Make sure to always wear polarized sunglasses!)
 
"These changes to sunscreen labels are an important part of helping consumers have the information they need so they can choose the right sun protection for themselves and their families," said Dr. Janet Woodcock, director of FDA's drug division.

Under the new rules:
• Sunscreen marketing claims like "waterproof" and "sweatproof," will be prohibited.  The FDA says such claims, "are exaggerations of performance."
• The FDA seeks to cap the highest SPF value at 50, unless companies can provide results of further testing that support a higher number.
• A four-star system currently used by some companies to rate UVA protection must be phased out.  The
FDA decided the star system was too confusing to consumers.  Instead, protection against UVA should be proportional to protection against UVB, which is already measured using SPF.

The SPF number indicates the amount of sun exposure necessary to cause sunburn on skin protected by sunscreen, as compared with unprotected skin. For example, an SPF rating of 30 means it would take a person 30 times longer to burn wearing that sunscreen than with no sunscreen at all.

Although the new guidelines do not take effect until next summer, many companies have already adopted the some of the labeling outlined by the FDA.   Coppertone as well as Neutrogena sunscreens already boast "broad spectrum UVA and UVB protection."

According to the National Cancer Institute, last year about 68,00 people in the U.S. were diagnosed with melanoma — the most dangerous form of skin cancer.  An estimated 8,700 died from the disease. Almost $2 billion is spent each year treating the disease.

Monaco Grand Prix Megayacht OLAH offers discount

Italian-built motor yacht OLAH got everyone's engines revved-up with the announcement of a 25% price reduction AND a secured trackside berth for the 2011 Monaco Grand Prix.

The 47.5 meter yacht was offering a 5-day race package for Euro € 159,000, but reduced that price to Euro € 120,000 for 5 nights, including the berth.   All running expenses, such as fuel, food, and bar are extra.

The rush is on to book a last minute Monaco Grand Prix yacht!

As the dates draw closer for Europe's premier Formula 1 Grand Prix and similar special events such as the Cannes Film Festival, charter customers are cautioned to first concentrate on where they will dock their rental yacht.

"When a customer contacts us to rent a Monaco Grand Prix yacht, we immediately focus on securing a berth in Port Hercules, the only marina adjacent to the race course," says Jana Sheeder, President of SailAway Yacht Charters"The only way to view the race from the deck of a yacht is to be moored in the marina, preferably in Zone 1, closest to the track and Jumbotron."

Unless you are a race team sponsor, dock space in the port is reserved via a written application and can take up to 5 weeks to process. 

"It doesn't matter if you want to attend the Grand Prix in Monaco or the Film Festival in Cannes, you must make it a priority to secure a berth many weeks, if not months, prior to the event," reports Sheeder
"We hear horror stories where people have rented a yacht only to find their charter broker did not secure dockage at the marina closest to the special event location."

With nearly all available dockage already reserved for the Grand Prix, Sheeder and her team are now promoting yachts that are available for the race dates AND have already secured premium dockage.

"We have several yachts such as the 26 meter JACKIE ONE, available for the race and with a secured berth in Zone 1, right next to the racecourse,"
claims Sheeder.

Launched in 2001, the 82-foot Amer motor yacht JACKIE ONE combines elegance with comfort and space. Refit in 2007 by Maiora, the yacht she is now equipped with a large hydro-massage Jacuzzi.

Designer Touts New Generation of Green Superyachts

The push for sustainability in the yacht industry continues.

Recently, we profiled  the use of eco-friendly
salmon skin upholstery in superyacht interiors, as well as the first self-sufficient zero carbon vessel.

Now comes word a design studio is crafting the next generation of hybrid propulsion green luxury yacht charter super yachts.

Touting increased energy efficiecy and lower noise and CO2 emissions,
Guido de Groot Design and Intec Marine are proposing two revolutionary concepts for propulsion.  The Intec Marine hybrid propulsion concept makes use of the an electric propulsion setup powered by two generators. An additional smaller generator is installed for calm water/harbor conditions or at anchor.

Take for example a Monaco Grand Prix yacht, rented to be dockside for the race, then out for day cruising along the Côte d'Azur.  At cruising speed, one generator is able to generate power for the two propulsion pods and the load of the interior (cabin lights, televisions, galley, etc.). This results in very low noise levels, estimated at 35 dBA.

Cruising the yacht out of the marina at 6 knots can be done using the batteries. The second generator is in place for redundancy purposes and needs to be started for the yacht to reach maximum speed. When at anchor, the smaller, third generator is used.

According to the designers, when compared to a conventional setup with three diesel engines continuously running  (two for propulsion and one for interior load), a 30% reduction of use in energy can be achieved.

Say Goodbye To Traveler's Checks

"Don't leave home without them.”  That was the warning that actor Karl Malden shared with TV viewers in the 70's in a series of ads for traveler’s checks.  At the time, these checks were the safest way to carry money while traveling.
 
If you are planning a Mediterranean yacht charter holiday this summer, don't bother bringing any traveler's checks.  It seems traveler’s checks, just like those commercials, are becoming a distant memory.  "After last season, we noticed many retail outlets in Europe have ceased to accept traveler's checks, " states Jana Sheeder, President of SailAway Yacht Charters.  "Travelers who have relied on these checks for years are finding themselves in a cash-flow limbo."
 
For years, travelers turned to traveler’s checks as a way to carry something close to cash safely. For a small fee, companies such as American Express promised quick replacement if the checks were lost or stolen.

Most retailers accepted the checks as cash, but that began to change with the use of electronic payments, primarily via debit and credit cards. A report by the U.S. Federal Reserve of St. Louis states the use of traveler’s checks has been on a steady decline since the 90's.

According to Sheeder, “The few places that still accept them are charging large commissions to change them. Compounding the problem are the exchange rates, often 10% less than the rate you can get through an ATM machine."
 
To keep fees to a minimum, Sheeder encourages Mediterranean yacht charter customers to purchase prepaid travel cards instead of traveler's checks. Sheeder says, "The most efficient way to pay for goods and services, particularly when traveling overseas, is by using prepaid travel cards and credit or debit cards." 

Brian Kelly,
an expert who blogs about awards points while traveling, concurs.  In a related interview, Kelly said, “People should get a credit card that works for them. Many credit cards offer fraud protection, awards points and some even provide rental car insurance at no additional cost.

Before you pack your bags for your Monaco Grand Prix yacht charter holiday, Sheeder has some final thoughts regarding the use of  debit or credit card overseas.  She offers these guidelines:

• Make sure your bank is aware that you will be traveling. Many banks will shut down a card if they see suspicious purchases, such as charges outside of  the country.

• Check on the exchange rate fees. While many banks will not charge an ATM fee, there are sometimes large exchange rates for using an ATM overseas. For this reason, use the ATM as little as possible, and consider a prepaid travel card.  (You can purchase prepaid travel cards through banks and credit card companies. They are safe and secure.) If you do use an ATM, use the one at the bank, rather than the independent ones on street corners.

• If you plan on leaving a gratuity for your luxury mega yacht charter crew, consider a bank wire transfer.  Make arrangements with your charter broker to wire the tip to the captain at the conclusion of the charter. "Most crews are not in a position to accept credit or debit cards," says Sheeder. "In today's world, it doesn't make sense to carry large sums of cash for the purpose of leaving a tip.  Wire transfers are simple, fast and safe."

It's hard to book a Monaco Grand Prix yacht or secure a bareboat charter in the Seychelles if you can't read the information on a website due to language barriers.

The team at SailAway understands.

With the help of the folks at Google, they have installed a language conversion toolbar on their website.  

Located for now on the BLOG page, the Google Translator allows visitors to instantly convert all of the text in the blogs into their preferred language. 

All major languages are available, including German, French, Spanish and Russian.

"Ours is an international business," states SailAway President, Jana Sheeder.  "Whatever we can do to simplify the information and reservation process, we will do.  Making information available in the visitor's native language can only help the process."

For example - a German client who speaks minimal English might be interested in securing dockage for a
London Olympics yacht charter.  One of the blog's details is the role the London Docklands Marina is poised to play in hosting dozens of the newest and largest motoryachts
in the world during the Olympic games.  The facility is a mere two miles from Olympic Park and several other venues for the games. 

With the click of a mouse, that information will be translated to read,

"Der Yachthafen in den Londoner Docklands wird balanciert, um den Gastgeber für Dutzende von neuesten und größten Motoryachten der Welt während der Olympischen Spiele. Die Anlage ist nur zwei Meilen vom Olympischen Park und mehrere andere Austragungsorte der Spiele."  

Sheeder is confident this tool will work. "If we can increase a prospect's comfort level, his or her confidence in our ability to provide the best customer service should increase as well."  

After an initial trial period, the company plans on installing the translation tool on the rest of the website.  For now, it only works in the blog portion of the site.
